How to cook the perfect Trout of Salmon on the coals

Salmon and Trout are very delicate. Also not the cheapest fish you can buy. Trout being the cheaper option. However, this time of the year, it is perfectly ok to splash out a little. It is very important to follow these easy guidelines to ensure perfection every time.

1.Remove the gill and gut your trout. Firstly it looks terrible if you cook the guts and the gills and secondly the gills give a muddy, almost dirty taste. No need to scale, as trout have tiny scales. Of course if you buy from Threestreams, the trout and salmon are cleaned and trimmed to perfection

2.Your grill must be clean and free of burnt evidence of your last braai! Scrub them down with the wire grill brush once you’ve heated the grill. Wipe with a piece of kitchen toweling just before you  spray and oil the grill.

3.The fish must be at room temperature. It ensures even cooking right to the bone. 

4.Rather be safe than sorry. I spray the grill with Spray n Cook and then I oil the fish as well as the grill This will prevent it from sticking.

5.Your grill must be hot, but no flames. High heat.

6.Don’t fiddle with your fish – flip the fish only once. If it comes off the grill easily, it is ready to flip. Baste the trout with some butter or oil – it keeps everything moist.

7.Let the trout cook until they are nicely charred. Depending on how big your fish is, it can take 5-8 minutes per side.

1 x 800-1kg fresh Threestreams trout – gutted and cleaned

1 jar Pesto Princess Basil & Lemon Pesto

1 red onion – peeled

Fresh coriander

Salt and pepper to taste

30 ml Olyfberg olive oil

Juice of 1 lemon


Use paper toweling and pat dry the trout inside and outside. Use the whole jar of pesto and spread lavishly on the inside of the trout. Pack a layer on red onion slices and fresh coriander inside the trout. Use string the secure tie around the fish to keep the filling inside while grilling.

Drizzle the oil over the trout and give it a good rub. Squeeze the lemon juice over the fish and lastly season with salt and pepper.

Grill on medium heat (coals or griddle pan) until the trout is firm to the touch.
