Smoked Snoek Fish Cakes for the school lunchboxes. Can you believe it? December holiday is on its last legs and we are about to tackle a new school year.

Making sure that our children eat a balanced meal and snack every day is so important for their development. It can be tricky at times, especially when it involves vegetables and ingredients they do not like. Fish is always a tricky one. However these Smoked Snoek Fish Cakes are just perfect. If you are struggling with picky eaters, I found a solution for you.

Last year, I came across this incredible website for parents with little children. Little Foodease has an online shop, but also shares ideas on feeding our picky little eaters. Really very informative and clever designs. Do take a look at their online shop – I wish my children were still tiny. There are even little video clips to show you how to do it. I love the adorable place mats, suction bowls, and the sensory play boxes are just next level.

makes 8


500 g Threestreams Smoked Snoek

zest of 1 – 2 lemons ( I used 2 small ones)

125 ml chopped parsley or coriander

1  egg

oil for frying

Flour for coating


Remove the skin off the snoek and flake the fish with your fingers. Make sure you remove all the little bones. Add all the other ingredients and place in food processor. Process until you have a smooth mix. Shape into 8 even-sized patties. I use a fun cookie cutter to keep it exciting for the kids. Dip each fish cake in the flour, place on a plate and repeat with all the other fish cakes. Place the fish cakes in the fridge for 20-30 minutes. Heat the oil in a pan and fry the fishcakes on both sides until golden brown. Serve with the vegetables and fruit in bite-size pieces for the kids.
