Easy Plum Upside Down Cake

My Easy Plum Upside Down Cake recipe will be the one that your children ask for when and if they eventually leave the house. I don’t mind, you can tell them it was your recipe.
I baked this Easy Plum Upside Down Cake over the weekend, while we were trying to get our mind around the magnitude of the Coronavirus disease (COVID-19). It is trying times for all of us, so a little sweetness only helped to lighten the moment. we loved the cake with ice-cream and again on Sunday with warm custard. If you read the recipe, I hope your mind goes as wild as mine, because the possibilities of fruits are endless. Think…. apples, pears, figs, orange slices, berries and whatever you can think of. Even frozen fruit will work.
Easy Plum Upside Down Cake
makes 1 x 23 cm cake
Ingredients
80 g butter
60 ml light brown sugar – firmly packed
For the batter
100 g butter – soft, but not melted
250 ml sugar – I prefer caster sugar
2 jumbo or extra-large eggs
375 ml self-raising flour
10 ml baking powder
3 ml salt
200 ml milk
10 ml almond extract
Method
Preheat oven to 180 C/350 F. Line a springform pan (23 cm) with baking paper and spray the inside with Spray ‘n Cook. Melt the butter and brown sugar in the microwave for 1 minute. Pour the melted butter/sugar mixture into the pan and swirl the pan to cover the entire base. Place the plum halves into the syrup, bottom size down. (as per illustration)
Place the 100 g butter and sugar in mixer and beat until light in color. Add the eggs and mix properly. Sieve the self-raising flour, baking powder and salt together. Add the flour mixture to the butter mixture while the machine is running. Add the milk and almond extract and beat until well mixed. Scoop the mixture onto the plums and use a spatula to spread it evenly. Bake for 35-40 minutes or until the cake pulls away from the sides of the pan. Remove from the oven, rest for 5-10 minutes. Invert the cake onto a plate. Release the clip of the pan and voila, a beautiful easy upside down plum cake.
