Today I made Fig Tartlets – Four ingredients only! Except for the fresh figs, which is now available, you should have all the ingredients.


These little tarts are truly delicious, it kind of boggles your mind, because of the sweet/savoury twist. This is exactly why it is perfect to serve as a light lunch with a simple green salad or as a snack.Don’t let me stop you from trying your own flavors. Apple and blue Cheese, Plum and Chicken, Beef, roasted onion and mustard, these are just a few of my ideas. I am sure you can think of many others.

I love recipes that seem difficult and intricate to make, yet it is actually child’s play. Like these Trout Wraps, Goat’s Cheese Crostini with Roasted Grapes, or this Whipped Blue Cheese on Crackers. Now that we are all isolated and sometimes bored, get the family involved. makes 8

Ingredients

8 ripe figs

8 strips thin pancetta or streaky bacon

1 roll puff pastry – I prefer Woolworths square sheets. You only need one sheet.

a few spoons marmalade or honey

Method

Preheat oven to 180 C/350F. Line a baking sheet with baking paper.

Cut the puff pastry into 1.5 cm strips. Place a strip of pancetta or bacon on each pastry strip. Roll the pastry/pancetta strip around the base of the fig. Make a criss-cross in the fig with a sharp knife and squeeze with your fingers to slightly open the fig. Spoon about ½ teaspoon or marmalade or honey into the top of the fig. Place all figs on the baking sheet and bake until the pastry is golden brown. Remove and serve with a green salad.
