Homemade Bagels Recipe

A Homemade Bagels Recipe that I can follow. I have been wanting to make bagels forever, but always steered because of my preconceived ideas that it is difficult.

My Homemade Bagels Recipe is not difficult at all. I watched quite a few video tutorials and read a fair share of recipes, in the end I made my own recipe.

In a previous post I used have bagels, but just bought some for the recipe. I love the chewy texture and my favorite topping is course salt and a close second is white and black sesame seeds.

makes 8


1 x 7g packet instant yeast

+- 2 cups/500 ml lukewarm water

30 ml/2 T honey

30 ml/2 T salt

500 g/4 cups flour

For the water bath

¼ cup/60 ml sugar

2 t/10 ml baking soda

3-4 liters water

1 egg – lightly whisked

about 125 ml mixed seeds of your choice


Place the yeast, honey and water in the bowl of your mixer and mix with a fork just to combine. Allow this mixture to stand for 10 minutes or until it is foamy. Add all the flour and salt and let the machine run on medium until you have a glossy dough. Remove the bowl from the mixer, cover with a tea towel or plastic bag and allow to rise for about 1 hour.

Knock the dough down, knead a little and then divide into 8 equal-sized balls. With a cupped hand, roll the bowls into perfect round balls and place on a baking sheet, lined with baking paper and sprinkled with a little flour. Cover with a tea towel and allow to rise for 15 minutes. Take each dough ball and shape into a bagel by poking your thumb and middle finger all the way through the center of a ball. Gently stretch the dough to form the bagel. Place the bagels back onto the baking sheet and allow to rise for 15 minutes.

PS: Some bakers, put the bagels in the fridge overnight at this stage. I might try it next time, just to tell the difference.

Preheat oven to 220 C/450 F

Place the water, sugar and baking soda in a big pot and bring to the boil. Once it is boiling, lower the heat and let it simmer. Have a clean baking sheet  next to the stove for the boiled bagels. Lift the bagels off the pan their were in and lower into the water bath. Each bagel should boil for 30 seconds. Remove it and place on the clean baking sheet. You can do 3-4 bagels at a time.

To Bake –  Line two baking sheets with baking paper. Brush each bagel with egg wash and dip into the seeds. I kept a few bagels without seeds and just added course salt. Bake for about 20 minutes. They should have a deep golden colour.
