I used the Instant Pot Shredded Beef for our nacho night, but there are so many other delicious Mexican recipes where you can try this delicious beef recipe. Everyone loves tacos, but why not ring the changes and try this low-carb Mexican Salad Wraps.

I have had so many request for Instant Pot recipes. To be honest, I have so far tried soups, and stews, but if I go online I am mesmerized by people’s creativity. Cakes, Yogurt, jams, puddings, the list is endless.

Instant Pot

Is the Instant Pot worth it? People ask me this often.

My quick answer is YES! I do have a few counter questions though.

Does you family like stews and soups?

If they do, then I think it is a good investment, but if they prefer hamburgers and pizza, you should rather invest in a cast iron skillet.

Do you have space for it?

I have a golden rule in my kitchen. All appliances I buy must be worthy of their space on my counters. In other words, it must be used often or be multy-functional. Like my Philips Air Fryer. If I have to dig in cupboards to find appliances in boxes before I start cooking, it is a no-no from me.

Is an Instant Pot better than a pressure Cooker?

Yes, it is safer and has many more functions.

If I have not managed to convince you, you should probably watch this.

Instant Pot Shredded Beef

So back to the recipe for the Instant Pot Shredded Beef. The best cuts of beef is for this purpose is chuck or brisket. Brisket can be a bit fatty, but the flavour is intense. I had a 1 kg piece rump tail.  For those of you who don’t know. The rump of a beef has three muscles – the cap, the eye and the tail. The eye muscle is perfect for steaks, the rump tail can be cooked as a whole cut. It is packed with flavor and has just enough fat for this dish.

serves 4-6

Ingredients

1 – 1.2 kg rump tail

2 medium onions – cut in chunks

2 bay leaves

10 ml/2 t smoked paprika

5 ml/1 t cumin

10 ml salt

a few sprigs thyme

400 ml Woolworths Smokey Marinade – use the rest of the bottle after cooking

I did not use water, because my meat was partially frozen. You might need about 125 ml water.

Method

Place meat, bay leaves, thyme, salt, smoked paprika and marinade as indicated in the pot. Close the lid and put the lock in place. Set the steam release knob to the sealing position.  Set to Pressure Cook, High Pressure, and use the + – buttons and select 70 minutes. At the end of the 70 min cycle, switch the pot off and allow the pot to release naturally for about 10 minutes.

Now turn the steam release knob to the Venting position, this will release all the steam. When the pin in the lid drops down, you can open the lid and remove the meat. Switch the pot back on and set on Sauté function. Add the remaining Smokey Marinade from the bottle and allow the sauce to reduce to about half. While this is happening, shred the beef with a for. Add enough of the reduced sauce to your liking. Serve with nachos, sour cream and onion pickle.
