Blue and White Iced Biscuits for Mother’s Day. Yes, I still have a mother, I realize every year as I get older, what a huge blessing she is.

The Blue and White Iced Biscuits was going to be wrapped in dainty paper with a lovely hand-made card and packed in a pretty box with a blue ribbon. Then Covid-19 happened. My parents are in Onrus and we are here in Cape Town.  So even if I did decide to take the risk of driving to them, it will put all of us at risk.  I marvel at the beautiful iced biscuits I see on Pinterest, the Delft ones, of course my favorite. I soon realized after doing one “delft” attempt that maybe I should start with something a little simpler and work my way up from there. So this is my first try, but this is like Scrapbooking, it can get addictive, I am well aware of that. Who’s going to eat all thos biscuits, I wonder?

makes bout 24 cookies


625 ml / 2½ cups flour
5 ml / 1t baking powder
220 g butter, at room temperature
200 ml / ¾ cup caster sugar
1 x-large egg
5 ml / 1 t vanilla extract

Blue and White Iced Biscuits


Sift the cake flour and baking powder into a bowl. In another bowl, beat the butter and sugar with an electric mixer until light and creamy. (I use my stand mixer for this.)Now, add the egg and vanilla and mix.
Lower the mixer speed and slowly add the flour mix until it just comes together. Divide in 2 pieces and wrap each piece in plastic wrap. Allow the dough to rest in the fridge for at least 30 min.

Preheat oven to 180 C/350 F. Line 2 baking sheets with baking paper. Roll out the one piece of dough on a floured surface, keep dusting with flour as needed, until about 15 mm thick. Cut out the cookies, using your favorite cookie cutters and place on the prepared baking sheets, about 2 cm apart. Collect all the scraps of dough and refrigerate until firm. Re-roll and cut more cookies. Repeat the process with the other piece of dough.
Bake for 12 -15 minutes. Allow to cool on the baking sheets for a few minutes, then transfer to racks to cool completely before you can start icing.

Blue and White Iced Biscuits

For the Royal Icing


4¼ cups confectioners’ sugar (icing sugar), sifted

3 large egg whites

½ t cream of tartar


Combine all the ingredients in a large bowl and mix with a hand mixer( Do this on low speed. until blended.) Increase the speed and beat until the icing holds thick, soft peaks. This takes about 5 min. Divide the icing into smaller bowls, depending on how many colours you want to use. I used only blue.
