Best Ever Chicken Marinade for BBQ

This is the Best Ever Chicken Marinade. Well, that is my opinion and for know I am sticking with it.
The “Best Ever Chicken Marinade ” is quite a cheeky statement, I know. There are so many good marinades out there and we all have our own preferences. Some like it more spicy, some more fruity and most people I feel are happy with sticky and sweet. Maybe that is why I like this one so much. It is the balance between not so sweet, spice and tangy all at the same time.
The truth is, I am not too keen on marinades, I like to taste the meat, so usually I go with simple spices. For chicken however I like a marinade. So, for burgers, kebabs or just chicken pieces, this is the one. I already made my second batch. It keeps in the fridge for weeks and even works on steak and lamb chops, although I prefer those without marinades.
Best Ever Chicken Marinade
makes about 450 ml
Ingredients
½ cup/125 ml vinegar – I used balsamic vinegar
½ cup/ 125 ml olive oil
¼ cup/ 80 ml dark soy sauce
¼ cup/ 80 ml Worcestershire sauce
3 T/45 ml lemon juice
¾ cup/ 200ml dark brown sugar
2 sprigs fresh rosemary or thyme (I used both) – finely chopped
3 T/ 45 ml Dijon mustard
2 t/ 10 ml salt
1 t/ 5 ml smoked paprika
1 t/ 5ml chili powder
2 t/ 10 ml garlic powder
8 chicken portions
Method
Place all the ingredients for the marinade in a bowl and whisk until emulsified. Pour into a clean jar or bottle and keep until needed. When you are ready to have a cook the chicken, take one cup of the marinade and pour it over the chicken pieces. I kept my chicken in the marinade for 2 hours, simply because I had the time. Try this on the outside fire, on the grill and in the oven. All came out perfect for us – juice and delicious. While on the fire, I used the marinade that the chicken was in to baste the meat all the time. PLEASE DO NOT POUR USED MARINADE BACK INTO THE BOTTLE.
