Super Easy Naan Pizzas

I made these Super Easy Naan Pizzas over the weekend and the family loved it so much, I will most definitely make it again very soon.
Super Easy Naan Pizzas can never replace the real deal. Making pizza dough from scratch is a labour of love, but the reward of biting into a crispy thin crust is so worth it. I make 12 pizzas in one go and freeze them. At least then we have pizza for 3 meals.
The naan pizzas came about when I saw a short little video on How to make Naan breads with only two ingredients. I made the naan breads to go with our butter chicken one night and it got me thinking about other possibilities. Pizza obviously came to mind, I still feed youngsters you know.
I’m thinking, to make one or two batches of these naan breads and freeze them with desperate bags filled with different toppings. Think shredded chicken, bacon bits, leftover beef or pork and of course grated cheese. With a bottle of tomato pasta sauce in the fridge, ther is no reason why you can’t make pizza in a whim.
Super Easy Naan Pizzas
makes 6
Ingredients
2 cups/500 ml self-raising flour
1 cup/250 ml double thick yogurt
For the toppings
100 g butter – melted
5-10 ml crushed garlic – depends how much you love garlic
½ t/ 2 ml salt
1 T /15 ml chopped parsley
1 cup/ 250 ml tomato based pasta sauce
toppings of your choice – I used the following
– a few figs I had left over
– fresh or sun-dried tomatoes
– fresh herbs – basil and rocket is my favorite
– mozzarella – about 2 cups grated
– Fairview goats cheese
Method
In a mixing bowl, mix together the flour and yogurt, until it comes together in a ball of dough. Cover with clingfilm and allow to rest for 30 minutes. Divide the dough in 6 equal-size balls. On a floured surface, roll out each ball of dough until the size of a naan (use images as guideline).
Before you start baking, mix the butter, salt and parsley. Heat a non-stick pan or cast-iron pan on the stove and bake one naan bread at a time. I put the lid on for 1-2 minutes, the steam helps to create those big air pockets. Turn over and bake on the other side. Remove from the pan and brush with the garlic butter. Bake the other naan breads.
Preheat oven to 240 C. To assemble the pizza, spread a little pasta sauce on each pizza ( not on the one you will use figs), then the grated cheese, followed by your favorite toppings. I prefer the toppings on top of the melted cheese, but you follow your preference.
Place pizzas on a baking sheet and bake until the cheese is all melted and bubble. Serve with fresh herbs.
