Chicken Meatballs in Tomato Sauce


Chicken Meatballs in Tomato Sauce or Polpette di pollo al sugo di pomodoro. I must say the latter sounds very cool.

I saw the Chicken Meatballs in Tomato Sauce on Jamie Oliver’s site – he calls it Polpette di pollo. You know Jamie, everything is quick and easy and it always looks absolutely delicious. Which is exactly what I wanted – quick and super simple, but it must be delicious. In his recipe, Jamie uses cooked chicken breasts, but I used chicken minced meat, so either way can work for you.

My quest to find an easy-to-make pasta recipe paid off. The family approved. Look, there is something to be said for making tomato pasta sauce from scratch. Cooking it of hours to intensify the flavors is not bad, but during the week, it must be quick.

I also added pasta to my oven tray, so it was a meal-in-one. We loved it.

Chicken Meatballs in Tomato Sauce

serves 4

Ingredients

For the meatballs

600 g chicken fillets – cut in chunks

1 spring onion – finely chopped

1 clove garlic – finely chopped

1½ cup/375 ml fresh breadcrumbs

a small handful basil – finely chopped

2 t/ 10 ml salt

zest and juice of 1 lemon

freshly ground black pepper

45 ml olive oil or canola oil

For the sauce

2 x tins chopped tomatoes

5-10 ml sugar

5 ml salt

fresh thyme or any other herb of choice

250 g pasta of choice – I used fussili

fresh basil and parmesan to serve

Garlic Ciabatta

Method

Preheat oven to 180 C/350 F. Place all the ingredients for meatballs, except the oil, in a food processor and blitz until it has a coarse texture. Make meatballs 16 meatballs (golf ball size). Pour the oil into a oven casserole or tray and add the meatballs. Place in the oven and bake for 15 – 20 minutes, tossing the pan every now and until meatballs have a golden colour. Add the sauce ingredients to the pan and mix through. Place the casserole back in the oven and bake for another 15 minutes. In the meantime cook the pasta according to packet  instructions – I used the microwave, because it is quicker. Drain the pasta and add to the tray when done. Serve with toasted garlic ciabatta, fresh basil and grated parmesan.
