Very Cheesy Pastry Ring

A very cheesy pastry ring indeed. Just think about buttery puff pastry, goats cheese, prosciutto, herbs and then….. more melted cheese.
My family devoured this very cheesy pastry ring and in between huge mouths filled with this deliciousness, they all had ideas of new flavors and textures to use in our next pastry wheel. Chocolate and nuts, sundried tomatoes and mozzarella, pesto and feta and these are just a few ideas. I think what I need to put on my staple shopping list, is rolls of puff pastry. I can make these Mushroom tarts in a flash and they are showstoppers every time I make them. For a fancy schmancy Sunday lunch I can stretch a few lamb shanks and make these Pies, with no effort at all.
I know you can make your own puff pastry, it is actually quite therapeutic, but in my life, week days are somewhat of a rush. I take the short cut. So let’s get baking.
Very Cheesy Pastry Ring
serves 4-6
Ingredients
1 roll puff pastry – I prefer Woolworths
125 g cream cheese
125 g sundried tomato pesto – make your own or I used Pesto Princess
70 – 80 g prosciutto – optional
250 g Fairview Roydon Camembert
1 egg
Method
Preheat oven to 180 C/350 F.
Lay the puff pastry on a lightly floured surface. Cut down the middle, lengthwise. Spread each half with cream cheese, then top with the sundried tomato pesto. Next lay the sheets of prosciutto (if using) on the two halves of pastry. Cut each half of pastry with fillings in 8 strips (downwards). Take each strip and give it a twist like a cheese straw.
Line a baking sheet with baking paper. Find a ramekin or saucer, the size of the camembert, and place in the middle of th pan. Arrange the twisted pastry strips around the ramekin. Whisk the egg and with a pastry brush brush the pastry. Bake in the oven for 15 min or until the pastry has a light-brown colour.
In the meantime, make an incision around the edge of the camembert and remove about 5 mm of the rind. When the pastry has a light-brown colour, remove the ramekin and replace with the camembert and bake for 5-8 min or until the cheese is melted and gooey. Serve with fresh herbs and drinks.
