Buffalo Wings with Blue Cheese Dip has been on the Spur menu for as long as I can remember and every time they change the menu, this classic keep coming back. Why, because the people want it, that’s why.
Buffalo Wings with Blue Cheese Dip are for people who don’t even like blue cheese. The flavor of the dip is so subtle and cool and is just perfect for the hot, spicy chicken wings. It is very addictive, be warned. I make nothing less than 24 wings and trust me, we always fight over the last ones.
Who does not like blue cheese, I mean really? Can you imagine a bowl filled with gnocci and a blue cheese cream sauce or risotto with mushrooms and blue cheese? These are perfect for winter, but even in summer your burger comes to life with a blue cheese sauce.
Buffalo Wings with Blue Cheese Dip
makes 24 winglets
Ingredients
For the winglets
12 chicken wings
juice of 2 limes
5 ml smoked paprika (depend on how smokey you want it)
10 ml smoked chili flakes – optional
5 ml each salt and pepper
200 ml Woolworths Smokey BBQ Braai Marinade ( love this stuff!)
For the Blue Cheese Dip
50 g blue cheese – you can add more if you like blue cheese as much as I do.
250 ml sour cream
juice of ½ lime
3-5 ml freshly ground pepper
a small handful fresh parsley
Method
For the winglets
Preheat oven to 180 C.
Stretch out the wing, you will see three parts to the wing. It is very easy to see the joints when you position the wing this way. The wing tip, the middle part is the wingette and the juiciest part is called the drumette. You will make two cuts to be left with three portions. The wing tip, I discard of or use when I make stock.
Place all the chicken pieces in a glass bowl and add the lime juice, smoked paprika, chili flakes is using, salt and pepper. I allow the wings to marinade for about 30 min. Place all the chicken pieces on a baking sheet and place in the oven for about 30 minutes. Use a spoon or spatula to turn the chicken every ten minutes to brown on all sides. Pour the marinade over the meat and place back in the oven for 10 minutes or until the wings are sticky and delicious.
For the Blue Cheese Dip
In the meantime, place all the ingredients for the dip into a blender and pulse to a smooth consistency. Serve with the chicken wings, celery sticks and thin slices of green apple. The contrast in textures and temperatures, is delicious.
The wings look fingerlickingly delicious, but serious, the blue cheese dip is the star here!!
