Grilled Spinach and Cheese Sandwiches

These Grilled Spinach and Cheese Sandwiches are delicious, but the peppered honey takes them to the next level. I have a weakness for grilled sandwiches, but this one has set a new benchmark.
The Grilled Spinach and Cheese Sandwiches is nothing new, I mean spinach and cheese is kind of a classic combination, but the honey thing… there is a twist I was not expecting. It’s one of those silly, but super-delicious things that makes you think: “Why did O not think about that?”
Anyone who knows me, will know that I have a weakness for a good sandwich. A while back I posted a recipe for Oven-baked Caprese Sandwiches, they were so easy to make and the family loved them. A picnic loaf with Smoked Trout and Pesto can be cut into sandwiches and are just perfect for a family picnic basket. Oh, and who can resist a good BLT, here with bacon mayo, yum!
I made the Grilled Spinach and cheese Sandwiches with Fairview Feta ánd Ripe and Ready Brie – the feta gives a needed saltiness and so good with the honey and the Brie….. oh boy, the melted goodness. Grilled Spinach and Cheese Sandwiches
makes 6 sandwiches
Ingredients
a big bunch spinach – cleaned, cut off the white stalks and chopped
salt and pepper to taste
20 ml olive oil
1 clove garlic
1 small chili – chopped (optional)
12 slices white bread – I used a light sourdough bread
butter
12 sage leaves
125 g Fairview Ripe & Ready Brie
100 g Fairview Feta
125 ml grated parmesan
125 ml honey
5 – 10 ml coarse black pepper
Method
Heat a pan on the stove and add the olive oil, garlic clove and chili. The garlic cloves is there to infuse the oil, so remove it when it starts burning. Add the spinach and sauté until is is soft. Season with salt and pepper and remove pan from the stove. Start making your sandwiches. I use the butter on the outside of my sandwich, so on the inside of your sandwich you place a slice feta, topped with some spinach and lastly a slice Brie on top. Cover with another slice bread. Butter the outside of your sandwich and place a sage leave on the butter on each side. Repeat with the other 5 sandwiches.
Mix the honey and pepper and keep until needed.
Heat a cast iron pan or skillet on your stove. I prefer slow heat, so the cheese can melt. Sprinkle some parmesan on two or three sandwiches and place in the pan. Grill until it is golden brown on the bottom (yes, you have to peep every now and then). Sprinkle some parmesan on the top of each sandwich and turn them over and grill on the other side. Once all sandwiches are down, serve with the peppered honey. Oh, gosh, I am salivating while I type here.
