Lemon Bundt Cake with Strawberry Swirl


This Lemon Bundt Cake with Strawberry Swirl is super easy to make, really just mixing wet and dry ingredients together en voila, all done.

The Lemon Bundt Cake with Strawberry Swirl is kind of a play on the old fashioned pound cake. Pound Cakes were originally made with one pound each of butter, sugar, eggs and flour.

These days we make different proportions from the original recipe, and often use baking powder or baking soda and yogurt, yet they are still deliciously rich and buttery.

Lemon Bundt Cake with Strawberry Swirl

makes 1 cake

Ingredients

220 g butter/ 1 cup – softened to room temperature

250 g sugar/ 1 cup

30 ml lemon zest

4 large eggs

5 ml salt

10 ml baking powder

250 g flour/ 2 cups

125 ml /½ cup Fairview Yogurt

80 ml/ ¼ cup lemon juice

80 ml/ ¼ cup milk

5 ml vanilla extract

100 g fresh strawberries – puréed

Lemon icing

375 ml sifted icing sugar

10 – 15 ml lemon juice

Method

Preheat oven to 180 C /350 F degrees. Grease your bundt cake pan well. I use Spray ‘n Cook and I dust it with flour. (Bundt pans are notorious for sticking.) Use your hand mixer or standing mixer and cream the butter until light in colour. Add the sugar and lemon zest and mix well. Add the eggs one-by-one and beating well in between each addition.

In a separate bowl, sift the salt, baking powder and flour together. In a small jug, mix the milk, yogurt and vanilla essence. While the mixer is running, alternately, add the flour mixture and milk mixture to the butter mixture. Mix until everything is just combined. Pour the mixture into the bundt pan. Pour the puréed strawberries over the cake batter and use a skewer to swirl the mixture into the cake. Bake for 45-50 minutes, or until a cake tester comes out clean. Allow the cake to cool in the pan for about 10. Remove the cake from the bundt pan and allow to cool completely on a wire rack.

When completely cooled down, mix the icing ingrdients and pour over the cake. Serve with fresh strawberries.
