Four Ingredient Strawberry Parfait

Four Ingredient Strawberry Parfait, huh? Yes, no jokes, only four ingredients. That’s what you do when the family is dying for dessert and there is no chocolate and no ice-cream.

This Four Ingredient Strawberry Parfait is again proof  that if you have a few stock standard ingredients in your pantry, you can always make a plan. I have written about this before. There are a few staple ingredients that I cannot do without and as soon as I get to the second last packet, it goes on the shopping list. Rice, for instance, make sure you stock all the basic ones. Basmati, Jasmine, long grain white rice and brown rice. My other favorite staple ingredients is tinned fish – tuna, sardines, mackerel and pilchards. You can really make a delicious meal, using any of these.

Four Ingredient Strawberry Parfait

Back to today’s dessert. I have such fond memories of church bazaars or fêtes at school. The dessert table was always my first stop. Oh, my gosh, the choices and variety were to die for. It was however always the jellies and spongy Ideal milk desserts that bowled me over. I think because they were not overly sweet, they were cold and cheap. So todays dessert offering, fits all these criteria again. Not overly sweet – cold and cheap. Are you ready to make it?

Four Ingredient Strawberry Parfait

makes 6 servings


½ packet biscuits – it can be anything

400 g strawberries

1 packet strawberry jelly

500 ml cream

Four Ingredient Strawberry Parfait


Empty the packet of jelly into a small bowl and add 1 cup of boiling water. Mix until the jelly has dissolved. Allow the jelly to cool completely, but not set. In the meantime, crush the biscuits, either in a food processor or place in a plastic bag and whack it with a rolling pin. Keep aside until needed. Wash the strawberries and remove the stems. Keep 6 strawberries whole and process the other in a food processor until you have a coulis with tiny chunks. If you feel the strawberries are not sweet enough, add 1 or two teaspoons sugar. Keep until needed.

Whip the cream to soft peaks and while whipping add the jelly slowly. Spoon 6 glasses halfway with the parfait mix. Pour some strawberry coulis in the glass and fill with the rest of the parfait mix. Serve with biscuit crumbs, strawberries and edible flowers if you wish.
