Easy Tandoori Chicken Recipe


My Easy Tandoori Chicken recipe is hardly a recipe, but man is it to-die-for. As little effort as marinading the chicken, pop it in the oven and you’re done.

This easy tandoori chicken recipe is so easy that you can at least put some effort in the side dishes. It is the side-dishes, together with the spicy grilled or oven-roasted tandoori chicken that makes this meals spectacular.

In South Africa, we LOVE chicken. Almost 19 million chickens are slaughtered every week to fee the nation. A staggering 21% of that is going to the fast food industry. My question is this: Why buy take out if you can eat this, this or this……

Easy Tandoori Chicken Recipe

Tandoori Chicken is relatively healthy thanks to its lean meat amount and the cooking technique. It was traditionally cooked in the clay oven or tandoor, but I do mine in a normal oven with much success or I use the kettle braai or Weber.

What made this meal spectacular is the coconut rice and the banana salad. It just worked. So, do try and let me know if your family liked it too.

Easy Tandoori Chicken Recipe

Tandoori Chicken

serves 6

Ingredients

12 pieces of chicken – cleaned

100 ml Amina Tandoori Masala

juice of 1 or 2 limes

125 ml yogurt

5 ml salt

Method

Place the chicken in a glass or stainless steal bowl and add all the other ingredients. Rub each piece of chicken to make sure the chicken is well coated with the sauce. Keep in the fridge for at least 6 hours. I do mine before I go to work, then it is perfect around supper time. Preheat the oven to 180 – 200 C. Place all the chicken pieces on a baking sheet and bake until cooked with char marks on the meat.

Easy Tandoori Chicken Recipe

Coconut Rice

serves 6

Ingredients

250 ml/ 1 cup jasmine rice
310 ml /1 1/4 cup water
125 ml /1/2 cup shredded coconut
pinch of salt

Method

Place rice, coconut, salt and water in a medium pot that has a
fitting lid. Bring to fast simmer with the lid OFF.
Turn down the heat to a gentle simmer and then place lid on. Do not lift lid during cook.
Cook for 10 – 12 minutes or until all the water is absorbed. Keep the lid on and let the rice  stand for 10 minutes, fluff with fork and serve.

Banana and Cucumber Salad

Ingredients

4 ripe, but firm bananas
1 small cucumber – peeled
15 ml/ 1 T chopped fresh mint
juice of 1 lime
100 ml chopped roasted peanuts

Method

Cut the bananas and cucumber in bite-size pieces and place in a bowl. Add the mint, juice and peanuts.
