No Yeast Wholewheat Seed Loaf


This No Yeast Wholewheat Seed Loaf turned out the be quite a hit with my family. I mean, what is not to love about a warm bread straight from the oven with butter dripping from every slice.

A no yeast wholewheat seed loaf is what you bake when you come to the kitchen and there is no bread, not even a crumb. Saturday morning was one of those mornings. I wanted to make poached eggs on toast, but there was no bread for toast. I had no option but to bake, but baking with yeast is long and tedious and would not work. On to the internet, I go and found this recipe.

I doubled the batch, so I had one loaf to share with a friend and also, who switches the oven on for just one loaf of bread. You can also wrap one loaf in plastic and freeze so that you don’t get caught with your pants down again.😉

The bread is best eaten warm out the oven, when cold it is a little crumbly and you have to cut big slices to have a sandwich that does not fall apart. Toasting the bread of course is a delicious alternative.

makes 2 loaves

Ingredients

320 g/ 2 1/2 cups flour

200 g/ 1 1/2 cups whole-wheat flour

2 cups/ 500  ml mixed seeds – I used poppy seeds, sunflower, pumpkin and sesame seeds. Use 1 1/2 cup for the bread and keep 1/2 cup for the topping

10 ml/ 2 t baking powder

5 ml/ 1 t baking soda or bicarbonate of soda

5 ml/ 1 t salt

Wet Ingredients

625 ml /2 1/2 cups buttermilk or amazi

2 eggs

125 ml/ 1/2 cup vegetable oil

125 ml / 1/2 cup honey

a little extra milk if needed

Method

Preheat the oven to 180 C. Spray two (15 x 25cm) bread tins with Spray ‘n Cook. Mix all the dry ingredients ( except the 1/2 cup of seeds you must keep for the topping) in a mixing bowl.

In another bowl, mix all the wet ingredients.

Add the wet ingredients to the dry ingredients and mix properly. Spoon the mixture into the two bread tins. Sprinkle the 1/2 cup seeds over the two loaves and bake for 45 min or until a skewer comes out clean.
