Chicken Roll – This one is a meal in one!

Chicken Roll came to my rescue a few nights ago. Hubby invited someone for supper and I was so unprepared.

Luckily for me, I received a Today Pastry Mystery Basket earlier that day and I had leftover chicken from the previous night. This leftover chicken roll reminded me of my days in the Knysna School hostel. Our house mother Tannie Rina made magic with leftovers. Sometimes the leftovers were far better than the original dish and I always marveled at her resourcefulness. So one day I asked her why she was so thrifty and “stingy” with her budget. Her answer blew me away. She said the Department of Education did not understand that all children should have a Christmas, so there was never a budget for a Christmas Party. She saved and pinched here and there,but at the end of the year, she made sure that every child had a little gift and an abundant Christmas Dinner. I learned a very valuable lessen that day…….

Leftover Chicken is a perfect example of being thrifty in your kitchen. I hardly ever roast only one chicken. After all you have to switch the oven on, make use of all the oven space and roast some vegetables, tomatoes, bake some brownies etc. Leftover chicken is not only good for this delicious chicken roll, but take a peek at this Oriental Chicken Noodle Salad and this strange but delicious Chicken Cheesecake. So I hope I have convinced you to always keep leftover chicken handy for crisis meals. Also make sure you always have a few rolls of Today Puff Pastry in your freezer.

So, back to my Today Mystery Basket, I had Today puff pastry, a bag of baby spinach, a butternut and some feta cheese. To make it a little more filling, I added shredded leftover chicken.

1 roll Today Puff Pastry

1 x 200g bag Spinach

1 small butternut

50 g butter

salt and pepper

fresh nutmeg

2 wheels feta cheese

1 egg
