Cherries Almond Tarts


Cherry Almond Tarts are just so beautiful and although they remind you of  mince pies, they are way more delicious and child friendly ( my kids hate mince  pies)

I like to keep things simple and this recipe is just that , really, really simple. I suppose you can do this with any fruit like plums, peaches or even apples, but it is Christmas and for me cherries says: “It’s Christmas!”

We grew up in Ceres which other than Ficksburg, produces loads of cherries this time of the year. Cherries are still not the cheapest fruit to buy, but that is why my memory of cherries around Christmas is so much more special. We always went on cherry picking expeditions and my mom always had fresh cherries on her trifle. As a child, I thought it was the pinnacle of  indulgence and being rich!

Most people think about Clafotis when we talk about baking with cherries, but these Cherry Almond Tarts truly features the sweet taste of the cherries, the buttery shortcrust pastry, merely keeps the juices contained. You can make one big tart or individual ones, yes, that is how adaptable this recipe really is!

Ingredients
For the shortcrust Pastry
Servings: mini tarts
Instructions
  1. Place the cherries in a bowl and add the juice. Refrigerate for 40 minutes.
  2. To make the shortcrust pie crusts, place the flour, salt, almond essence and sugar in a bowl.
  3. Add the cubed butter and with your fingertips rub the butter into the flour mixture until it resembles fine crumbs.
  4. Add some ice water until you have a workable dough. Cover in clingfilm and allow the pastry to rest for at least 30 minutes.
  5. Roll the pastry out on a lightly floured surface and cut 8 circles to fit your mini moulds or just use a rectangular loose bottom tart dish.
  6. Spray your tart dishes with Spray 'n Cook and line with the pastry.
  7. With the remaining pastry, cut our stars, hearts or other shapes and keep ready for when you need them.
  8. Remove the cherries from the fridge and drain. Keep the juice.
  9. Add the Mazeina and sugar to the cherries and mix.
  10. Divide the cherry mix between the 8 tarts.
  11. Place the pastry shape that you made on top of the cherry filling.
  12. Brush the pastry with egg wash and bake the tarts for 25-30 minutes.
  13. Pour the cranberry juice that you kept in a small pot, add some sugar and reduce to a beautiful red syrup.
  14. When the tarts come out the oven, spoon little bits of the cranberry syrup over the cherries.
  15. Serve with thick cream or ice cream.
