Smores Brownies – For the kid in you!

Smores Brownies (S’mores) are my new bribing tools, I kid you not.
Just kidding, I don’t have to bribe my kids to do stuff, but I can tell you, my son especially has a weakness for anything sweet. These smores brownies are his new weakness. I made them for my daughters end-of-hockey season and the kids absolutely love them.
We all remember making smores around the campfire, toasting marshmallows and sandwich with a piece of chocolate between two crackers or cookies. Yes, it is an American tradition, but not all American traditions are bad is it? Think Corn Dogs, think Rocky Road, Pumpkin Pie and Banoffee Pie! The beauty of these smores brownies is, that you do not use any expensive ingredients. No 70 % dark chocolate, no cream, no nothing of that, just store-cupboard ingredients and lots of love and care. If you still have children at school, this is a recipe that you have to stick to your fridge door. These Smores Brownies are quick and affordable and you can bring a smile to your children’s faces in no time.
- 450 ml sugar - granulated is fine
- 125 g butter - melted
- 30 ml water
- 2 eggs
- 10 ml vanilla extract
- 350 ml flour
- 5 ml baking powder
- 2 ml salt
- 200 ml cocao powder
- 100 g milk chocolate
- 250 ml mini marshmallows
- Preheat oven to 180C or 350F. Line a 20×20 cm pan with grease proof paper.
- Mix the sugar, melted butter and water in large bowl.
- Add the eggs and vanilla extract.
- Combine flour, cocoa, baking powder and salt in another bowl and stir into the sugar mixture.
- Pour into the prepared baking pan and even out with a knife.
- Bake for 20 – 25 minutes or until it still feels slightly soft when you touch it in the middle.
- Remove from the oven and cool.
- Break the milk chocolate into smaller pieces and place in a glass bowl over some hot water so that the chocolate can melt.
- Spread melted Chocolate over brownies and scatter marshmallows over the chocolate.
- Allow to set.
- Use a blow torch to toast the marshmallows and then cut into 16 squares.
Without the marshmallows, these brownies freeze really well.
