Ultimate BLT with Bacon Mayo
My Ultimate BLT is deliciously flavorsome, crunchy, sweet, salty and then of course to top all that is the utterly delicious Bacon Mayo.
For the Sandwiches
wood smoked streaky bacon
syrup or honey
lettuce leaves of your choice
Washed and broken into smaller pieces
salt and pepper
For the Bacon Mayo
I use the rendered fat from the bacon and fill it up with canola
Chipotle Seasoning – Woolworths
zest and juice
bacon – cut into small pieces
Preheat oven to 180 C.
Place the bacon on a baking sheet and roast in the oven and bake until golden brown.
Drizzle the syrup over the bacon and roast for a few minutes more, but be very careful to not burn the bacon.
Remove bacon from oven and cool on a wire rack.
Make the Bacon Mayo.
Break egg into a jug, take care not to break the yolk.
Add the water and the vinegar.
Add the oil.
Place blade of your stick blender over the egg yolk and start the machine, keeping it down until you see the mayo forming. Slowly pull the stick blender up, you will now have a thick luscious mayo.
Now add the Chipotle seasoning, lime zest and juice, salt and pepper as well as the bacon bits. Blitz until smooth and keep in a glass jar. You can add a little extra honey if you wish.
To assemble the sandwich. Take 4 slices of bread and smear the bacon mayo on generously.
Top with lettuce, tomato slices and candy bacon. Top with more Bacon Mayo and enjoy!
The bacon Mayo is delicious on baked potatoes, as a dipping sauce or squirted over a hotdog.
