Sandwiches – the simpler the better!

Sandwiches are my downfall! If it was not for bread I would take to the LCHF, Ducan or Paleo diets like an otter to water, but I love bread and in particular sandwiches!

Sandwiches do not have to be boring and that was exactly my topic when I had my first talk on RSG! my oh my does time fly, that special day was already in January 2011 and still every Thursday I religiously drive down to Sea Point to chat about my favorite topic food! I love sandwiches and if you go down to Woodstock and visit the now famous, Kitchen of Karen Dudley, you can even order a “Love Sandwich” ! Exactly what I call each and every sandwich I pack in the mornings for dad and the children!

A while back  there was a whole debate on Twitter and Facebook on how and why someone can call their recipe “The Ultimate!” The Ultimate choc chip cookie, the ultimate milk tart or the ultimate Mac n Cheese, when recipe books and the internet are flooded with similar recipes.   I agree! However when I refer the MY ULTIMATE sandwich, it simply reflects my favorit, the sandwich that makes my taste buds do the happy dance. So it is a matter of preference rather than excellence I wish to express!

Everybody  that knows me really well will know a tomato sandwich that has gone a little soggy is my to-die-for-sandwich! As a child I remember raiding my father’s lunch boxes when he came back from long trips and if my mom had time, she would pack toast with tomato in my lunchbox and by lunchtime the sandwich had gone all moist and yummee!

So it must come as no surprise then that “MY ULTIMATE SANDWICH” will be bread and tomato in some form or another! I have grown up a little and ordinary bread has made place for delicious ciabatta or sourdough bread and I find it very difficult to walk past tomatoes and these days tomatoes come in the most beautiful shapes and colors too!

The cheese of choice in my divine sandwich is of course Puglia Mozzarella Cheese! Do pay them a visit, the stuff is good!

My Ultimate Tomato and Cheese Sandwich

Serves 2

Ingredients

1 foot long ciabatta or baguette – cut in two halves lengthwise

1 or two ripe tomatoes

1 Puglia Fior de Latte

a little lemon-infused olive oil

salt and pepper

a few fresh basil leaves

Method

If you prefer the sandwich toasted, preheat the griller of your oven! Place the two halves of bread on a baking sheet. Top with slices of tomato and little chunks of the cheese and grill until the cheese is bubbly and slightly golden brown. Remove from the oven, top with a few basil leaves and drizzle the olive oil over the top. Season with sea salt and pepper.

The sandwich is as delicious without grilling it!
