This Creamy Mustard Chicken is definitely one of our top Chicken recipes. The kids love it, hubby loves it and I love the fact that the oven dos most of the work. This recipe is just perfect for the banters or those following the low-carb or LCHF way of eating. All you need to add is a simple green salad, some lightly steamed broccoli.
I always thought I was busy and involved with the children when they were small and still in primary school and that it will get better. Nope, nada, definitely not, I am busier than ever. Driving up and down to functions, sport practices and matches, I feel like Mother Uber! I suppose one day I will miss all this when they have left the nest.
Creamy Mustard Chicken
serves 8
Ingredients
16 chicken pieces – I buy the big braai trays
salt and pepper
2 cups/500 ml cream
½ cup/125 ml wholegrain mustard
15 ml cornflour or arrow root
Method
Preheat oven to 180 C. Clean the chicken and season with salt and pepper. Pack onto an oven tray or casserole. Roast chicken in the oven for 40 minutes. Mix the cream and mustard. Mix the arrow root or mazeina with a little water and stir into the cream mixture. Pour over the chicken and bake for another 30 minutes. Serve with cauli-rice ( caulii-couscous) , brown rice or just a salad.
