Smoked Mackerel Salad with Summer Fruit

This Smoked Mackerel Salad hit the spot tonight. No cooking in my kitchen today.
We all loved this Smoked Mackerel Salad, the salty fish, the crisp lettuce, creamy avocado and the refreshing summer fruits. All I added was a yogurt dressing and a few crispy rolls and voila, dinner was served.
Mackerel is somewhat underrated, especially amongst the fishermen. Well, at least the fisherman in my house. My husband says they use it as bait when catching tuna. All I know is that it is very good for you and also that is delicious in paté, sandwiches and yes, even pastas.
Mackerel is an oily fish and a rich source of omega-3 fatty acids. The flesh of mackerel spoils quickly,so caution must be taken especially in the summer months. Three Streams has taken the worry out of eating mackerel. I love that the portions are lightly smoked and ready to eat in your favorite recipe. Did I mention mackerel makes the most delicious fish cakes?
Smoked Mackerel Salad with Summer Fruit
serves 4 – 6
Ingredients
200 g Threestreams Smoked Mackerel fillets
half a iceberg lettuce – washed and broken into chunks
½ a cucumber – thinly sliced
125 ml chopped spring onions
1 pineapple peeled and diced in small cubes
8 – 10 strawberries cut in thin slices
fresh herbs – basil, parsley and thyme
2 ripe avocados – scooped in chunks

Method
Find your prettiest salad platter and just pile all the goodness on the platter in a neat chaos. Break the fish fillets into strips or chunks and add the the salad. Serve with crusty bread, wholewheat bread or banting crackers.
