Apple Fritters with Caramel

These Apple Fritters with Caramel should come with a warning. Do not eat while on a diet… of any sorts. I thought of an appropriate name and the first one that came to mind was: Death by Apple.
The Apple Fritters with Caramel should however be on your to-bake list if you want to spoil hubby or your kids or make up an edible gift for a neighbour.
I can think of few things more delicious than these fritters. Who can after all resist fritters of any sort. I make pumpkin fritters often during the winter. The fritters themselves are not overly sweet, especially if you use a green or slightly sour apple. The caramel, however makes up for it. So make yourself a batch, share if you have to. Eat them warm accompanied with a steaming cup of coffee.
Prep the following, before you start.
– fill a glass bowl with cold water – add the juice of 1 lemon – this is for the apple rings to prevent them from browning.
– mix the sugar and cinnamon in a flat bowl – it works better to dust the apple fritters
– line a tray with kitchen towel to drain the fritters when you lift them from the oil.
Apple Fritters with Caramel
Makes 24
Ingredients
For the caramel (make it first)
250 ml / 1 cup brown sugar
125 ml/ ½ cup water
80 g butter
250 ml cream
Method
Place the sugar and water in a saucepan. On low heat allow the sugar to melt completely. Bring to the boil and watch carefully. You want it to have a darl amber colour. Add the butter and stir until the butter is completely melted. Add the cream and stir until mixed. Pour into a jar and keep until needed.
For the Fritters
5 large Pink Lady Apples – Granny Smith apples can also work
1 lemon
375 ml/ 1 ½ cups flour
5 ml/1 t baking powder
3 ml/ ½ t cinnamon
pinch of salt
30 ml / 2 T sugar
250 ml milk or sodawater
1 egg
oil for frying – about 2 cups
For the Cinnamon Sugar
125 ml/ ½ cup sugar
5 ml / 1 t cinnamon
Method
Peel and core the apples. Cut the apple in 5 mm rings. Place the apple rings in bowl with water and lemon juice. Sift the flour, salt, baking powder, cinnamon and sugar in a bowl. Add the egg and milk OR soda water and with a whisk mix until you have a smooth thick batter. Heat the oil in a medium size pot. ( test with a small piece of bread to see if oil is hot) Dip with apple rings in the batter and fry until golden brown. When the fritters are golden brown, drain on kitchen towel and then coat with cinnamon sugar.
