Spicy Pork Salad Wraps

Spicy Pork Salad wraps were the hit in my kitchen yesterday when the kiddos arrived back from their first day at school! It took me 30 minutes to make and they devoured it in less than 5 minutes!
Spicy Pork sounds way more sophisticated than it really is, but it does pack a punch in flavor. I love using the cheaper cuts to make spicy pork. For me, the meat must chewy pieces, soft fatty bits an dyes, even the outer fat rind, I cut very, very small to give you that fatty, crackling taste….. big yum! So my preferred cut is the big leg chops, they are too big for frying and too small for roasting, but they re perfect for making spicy pork for my salad wraps.
The salad wraps are messy, but delicious. For anyone who is slightly squeamish to eat with their hands ( like my husband), it is maybe not a good option. My kids love it, it has crunch, sweet/sour taste and they love informal eating! This pork is perfect for tortilla wraps, it is good in a salad with fresh green leaves or served on basmati rice, it becomes a delicious meal!
Spicy Pork Salad Wraps
makes 12
Ingredients
1 kg pork meat – I use leg chops with little fatty pieces
45 ml olive oil
30 ml chopped ginger
2 cloves garlic – finely chopped
5 ml fennel seeds
10 ml smoked paprika
3 spring onions – chopped
1 -2 chopped chillies
1 red pepper – finely chopped
1 green pepper – finely chopped
45 ml soy sauce
30 ml honey
juice of 1 lime or lemon
fresh baby butter lettuce or Cos lettuce – washed
125 ml salted cashew nuts
Method
Place a big pan or wok on the stove and heat the oil in it. Add the diced pork and stir-fry until the pork is golden in color and starting to crisp up. Add all the other ingredients, except the honey, lemon/lime juice and soy. Stir-fry until the peppers are cooked, but still has a bit to it. Add the soy and honey and stir until the sauce thickens and the pork has a sticky gloss to it. Serve in lettuce wraps or cups, top with chopped nuts and basil sprouts if you have available.
