Onion and Vegetable Bhajis

Onion and Vegetable bhajis should be eaten warm, straight off the pan, dipped in either a chilled cucumber and mint raita or a spicy chutney.

Onion and Vegetable bhajis, I eat often. I live in Cape Town and my Cape Malay friends look after me. Until now, I have not made them that often though, but I think I have redeemed myself. The family loved them and they were gobbled up in no time.

Onion and Vegetable Bahjis

makes 16

Ingredients

1 packet Pakco Chilli Bite Mix

1 can KOO Mixed Vegetables in a Durban Curry Sauce

5 ml baking powder

1 egg, beaten

125 ml water

1 large onion – sliced very thinly

500 ml oil for frying

for serving – Quality Mebos Chutney or any other chutney of your choice

Method

Pour the chilli bite mix into a bowl and add the curried vegetables, baking powder, egg and sliced onion. Mix thoroughly. Fry heaped spoonfuls of the mixture until golden brown on both sides. Drain on kitchen toweling and serve immediately.
