Mini Croque Monsieur – You may take two!

Mini Croque Monsieur is the baby of the most delicious breakfast you will ever have, the big daddy Croque Monsieur.
I saw this Mini Croque Monsieur on Pinterest. I thought it was such a clever idea for a filling exam snack. Yes, I have two teens writing now. I also had a little more than a cup leftover bechamel sauce from my Classic Lasagna from last week. I also had the last of my St.Dairy Natural Soft Cheese left and thought the nutty flavor of the cheese will work wonders for this old classic.
Be warned though, this is extremely rich and not recommended on any diet you might be on. Oh my gosh, it is so delicious. It can even work as a quick lunch of dinner with a fresh green salad.
The secrets to this dish are: The cheese, the smokey ham, the buttery bechamel and last but not least the grating of fresh nutmeg on the top.
Mini Croque Monsieur
Makes 8
Ingredients
1 baguette
8 slices of smokey ham – I use Gypsy ham
8 slices St Dairy Natural Soft Cheese – or Mozzarella
salt and pepper
45 ml Dijon mustard
350 ml bechamel sauce
125 ml grated parmesan cheese
fresh nutmeg
Method
Preheat the grill of your oven. Spray a skillet with Spray n Cook. Cut the baguette into 16 slices. Spread mustard on 8 of the slices. Place a slice of cheese and ham on top of the mustard. Season with salt and pepper. Top with the other 8 slices of bread. Pour the bechamel over the sandwiches. Grate some parmesan and nutmeg over the top and grill to bubbling perfection. (10-15 minutes)
