Puff Pastry Berry Tarts

These Puff Pastry Berry Tarts reminded me of Spring and Summer and all things pretty. Well, it is not quite Spring nor Summer. Yet, these tarts are so delicious and quick to make, you can just pretend that it is already Spring.
The Puff Pastry Berry Tarts are made with Strawberry jam, so technically you can make them all year round. Even better, you can make each batch a different flavor. Think apricot, peach, fig, plum…. even marmalade can work.
My advise is to always have a jar or two of jam in your pantry and stock that freezer of yours with a few rolls of puff pastry. With the jam you can make these most addictive Jam Squares or our all time South African Hertzoggies. The puff pastry, oh man I have so many plans for puff pastry. Puff Pastry Berry Tarts
makes 24
Ingredients
2 rolls puff pastry
about 200 ml/ ¾ cup strawberry jam
250 ml/1 cup blueberries
1 egg – beaten
icing sugar for dusting
Method
Preheat oven to 200 C. Line two baking sheets with baking paper.
Roll out the pastry and mark each sheet in 12 equal-sized blocks. Use a sharp knife and score the pastry squares 1 cm around the edges. Brush egg wash around the edge of each pastry square. Bake the squares for 8-10 minutes or until they are puffed up. Quickly remove pan from the oven and put a teaspoon of jam in the middle of each square. Place 3-4 blueberries on the jam. Bake for another 5-8 minutes or until the square is golden brown. Cool, sprinkle with icing sugar and serve with cream, ice-cream or as is with a cup of tea.
