Air Fryer Choc Chip Cookies

These Air Fryer Choc Chip Cookies are totally addictive. They are buttery and the rich tones of caramel from the brown sugar are so, so moreish.
The Air Fryer Choc Chip Cookies of course will not be the same without the dark choc chips from The Kate Tin. Made locally, but these Dark Baking Chocolate Chips are also made from sustainably-sourced palm oil, UTZ-certified cocoa powder and South-African cane sugar. What is amazing about these sinful little nibbles is that they are gluten-free, dairy-free, preservative-free and Non-GMO. This makes baking for people with allergies so much easier.
I grew up with a mom that baked cookies only in December. It was the traditional ginger, coconut and spiced cookies. She literally baked buckets full. It was such an integral part of our carefree holidays, camping at the beach. My mom is almost 85 years old and she still bakes cookies in December….. a little less, but the grand children know that there will always be cookies at Ouma’s house.
Can you bake these cookies in a conventional oven?
The answer is yes, you can. The airfryer saves electricity, space and time. If however you want to bake like my mom, the baking sheet in a conventional oven is a better option.
In my house however, I do not have the time spend days on this labour of love. Luckily for me technology is on my side. Xiaomi’s new Air Fryer, the Mi Smart Air Fryer 3.5L, is now available in South Africa and will initially be sold exclusively on Mobile in Africa’s e-commerce store. The smart product connects over Bluetooth 4.0 and WiFi and is supported by the Mi Home App. It also works with Google Assistant and Alexa.
Not only can I bake cookies like Ouma in the Airfryer, I can also whip up over 100 other different delicious recipes. Not only do I use the Airfryer for our dinner, I also use our Mi Smart Air Fryer as food dehydrator, a microwave oven, a food defroster and a yoghurt maker! All in one gorgeous machine – elegant chrome accents on a white base.
Can I freeze the cookie dough?
Oh yes, I almost forgot to tell you this. With just hubby and me at home, having cookies around 24/7 is not good at all. So I simply freeze the cookie dough in little discs or balls and bake as many as I need when the kids come to visit. They go into the Airfryer straight from the freezer and you bake the 1-2 minutes longer.
Can I replace the dark choc chips with something else?
Of course you can. You can try cocoa nibs or even nuts of your choice. If there is not enough chocolatey goodness in these cookies, you can add omit 2 tablespoons flour and replace it with 2 tablespoons cocoa powder.
Can I double the recipe for the Air Fryer Choc Chip Cookies?
Yes, you absolutely can. One batch makes 18 cookies which is enough for us, but you can double up and make one batch to freeze. You will definitely be the cool mom who always has cookies in her house.
Air Fryer Choc Chip Cookies
Ingredients
113 g / ½ cup butter
125 ml / ½ cup brown sugar
80 ml / ¼ cup white sugar
1 egg
5 ml / 1 t vanilla essence
375 ml / 1 ½ cups flour
5 ml/ 1 t baking soda
250 ml/ 1 cup dark baking chocolate chips
Method
Melt the butter in a microwave-safe bowl for 25 seconds. The butter must just begin to melt. Add the brown and white sugar and beat with a wooden spoon until fully combined. Add in the egg and vanilla and beat for another 30 seconds. Lastly add all the other ingredients and mix until all the ingredients are properly mixed.
Place the dough in the fridge for about half an hour or overnight. Line the air fryer rack with baking paper. Roll the dough into 2 2 cm balls and place into the lined air fryer basket, about 2 – 3 cm apart. I fitted 4 cookies into my Airfryer.
Set the Air Fryer at 180 C / 325F for 7 minutes or until golden and cooked through. Don’t remove cookies immediately, as they are too soft and will break. Allow cookies to rest 2-3 min, then transfer them to a cooling rack. The cookies should be crunchy on the outside with a soft, almost chewy centre. All that is needed is a glass of cold milk or a cup of coffee.
