Leftover Beef Bao Buns

Making Leftover Beef Bao Buns is just the most delicious way of dealing with leftover beef roast. Not that we have leftover beef often, but if there is a little to spare, I love making this recipe.
Making the Leftover Beef Bao Buns is easier than you think, especially if you use my shortcuts. First of all, make sure you roast a slightly bigger chunk of beef, so that you always have leftovers for sandwiches or tacos. Secondly, I use ready-made dough for the bao steamed buns. I buy for my local supermarket – just ask at the bakery section.

Leftover Beef Bao Buns
makes 16
For the steamed buns
Ingredients
1 kg ready-made bread dough
15 ml vegetable oil
Cornflour for rolling out the dough
Method
Flour a working surface with the cornflour. Divide the dough in two and roll out to about 3 mm thick. Use a cookie cutter and cut out circles. Dip your finger in the oil and rub on half of each circle. Fold circle and place in steamer, lined with baking paper. Place the steamer on pot of boiling water and steam the buns for 8 minutes. Remove the buns, cover with a dry cloth and repeat with the other half of the dough.
For the Shredded Beef
Ingredients
About 3 cups shredded leftover roast beef
1 large spring onion – finely chopped – use white parts and keep green parts for garnishing.
30 ml / 2 T vegetable oil
10 ml/ 2 t minced garlic
10 ml / 2 t minced of grated ginger
1 green chili finely chopped
5 ml / 1 t red curry paste – optional
10 ml / 2 t brown sugar
10 – 15 ml soy – might be to salty if beef was very salty
A little water if necessary
Juice of 1 or two limes
Method
Heat the oil in a pan and saute the sliced, white part of the spring onion. Add the ginger and garlic and saute for a minute or so. Now, add the shredded beef and keep stirring. Lastly add all the other ingredients, stir through and cook until it is a flavorsome, saucy mix. Adjust flavors to your liking.
To serve
Chopped spring onion
Chopped coriander
Crispy fried onions
Sesame seeds
A little yogurt drizzle with coriander
Fresh wedges of lime.
