Oven Baked Caprese Toasties

I made a tray full of Oven Baked Caprese Toasties and it was gone in a flash. The idea was to freeze them individually so that the kids can make them as a lunchtime snack. There was none left to freeze.
The Oven Baked Caprese Toasties as just proof that simple flavors, done well, always work. In this case, good bread, cheese, sun-ripened tomatoes and fresh basil. A winning combination. These Caprese Bombs were delicious and so easy to make. A Caprese Salad is a classic not to be messed with….. well I did change it a little.
Why would you want to make toasties this way? Well, not everyone have a panini toaster and also you can make more than just two or four sandwiches. Of course you can play around with other fillings. Ham and cheese, Chicken and Mayonnaise, Beef and mustard – the possibilities are endless.
As with my pizza-making, I used a slate tile to press down the toasties and also to toast the sandwich from the top.
Oven Baked Caprese Toasties
makes 8 sandwiches
Ingredients
1 large ciabatta
Olive oil
4 large tomatoes
about 4 cups grated mozzarella cheese
fresh basil
salt and pepper to taste
2 large sheets baking paper
1 large slate tile or baking sheet and stones for weights
Method
Preheat oven to 180 C. Line a baking sheet with baking paper. Drizzle olive oil on the baking paper.
Cut 16 slices of bread and place 8 slices on the baking sheet, lined with baking paper. Top with slices of tomato, grated cheese and shredded basil leaves. Season with salt and pepper. Top with the other 8 slices of bread. Drizzle olive over the sandwiches. Cover with a sheet of baking paper and top with the slate tile or another pan with stones as weights. Bake in the oven for 10-15 minutes. Serve immediately.
