This Frozen Watermelon daiquiri is just too delicious not to share. Summer is on its last legs, but there is still watermelon available so no excuses.

A Frozen Watermelon daiquiri is possibly my new favorite flavor, as I was always strawberry kind of gal. Daiquiri is a family of cocktails whose main ingredients are rum, citrus juice, and sugar or other sweetener. Watermelon is without a doubt my favorite Summer Fruit, it brings back so many childhood memories of watermelon fights and carefree swimming afterwards.I made these super cool Watermelon Lollies in December, they were such a hit.

So, today is such a beautiful day in Cape Town. I have a suspicion our warm days are numbered, so make use of this opportunity to try this delicious drink. This drink can be non-alcoholic too, just omit the wine.

The wine of choice for this drink is the delicious Fairview Chenin Blanc. The wine has tropical fruit notes of pear, pineapple and lime on the nose and the palate is medium bodied rich fruity flavours follow by a lingering crisp finish.

To change this into a mocktail, replace the rum with coconut water or lemonade and the wine with Watermelon Flavored Tonic Water. Still refreshing, but no alcohol.

Frozen Watermelon Daiquiri

Serves 2

Ingredients

8 cups frozen watermelon chunks – pips removed
125 ml light rum
150 ml Fairview Chenin Blanc
90 ml lime juice (2 to 3 limes)
30 ml sugar

Method

Place all the ingredients in a blender and blend until smooth.
Serve
Divide among chilled glasses and garnish with mint leaves and a lime slice. Simple, delicious and relaxing for summer entertaining.
